Casa Virgelina / Castillo

Casa Virgelina / Garzon - Huila

Casa Virgelina

Three generations growing a story that endures.

Casa Virgelina is a family coffee farm in GarzΓ³n, Huila, where three generations have built a tradition around the land.

The story began with **Don IsaΓas MarΓn Cediel**, who, after losing his father at a young age, left his studies to take responsibility for his siblings. Years later, he inherited a small plot of land. Though modest, it gave him the opportunity to build a future for his family. Through hard work and perseverance, he planted coffee and raised his four children, passing on values of honest work, responsibility, perseverance, and love for the countryside.

Today, that legacy continues through his family. His wife, **Virgelina Quintero**, remains an important part of the story, while his grandson **Jhon Jairo MarΓn** now carries the project forward, working to show that farming can still be a meaningful path for a new generation.

The coffee comes from **Finca Tres Esquinas**, in Vereda Vega de Platanares, GarzΓ³n, Huila, at approximately **1,600 masl**. The farm's moderate, humid climate and local conditions shape the environment where its coffee grows.

Casa Virgelina primarily cultivates **Castillo, CenicafΓ©, and Tambo**, across several lots, while also maintaining smaller areas dedicated to experimentation. The family works with **washed and honey processes**, experimenting with fermentation, mucilage management, and drying to better understand how each decision influences the final cup.

With a focus on **traceability and continuous improvement**, the family follows each lot from cherry to green coffee and continues developing its knowledge of specialty coffee.

For Casa Virgelina, coffee is more than a crop. It is a way of keeping a family history alive while creating new opportunities from the land their ancestors entrusted to them.

**Three generations. One piece of land. One family. A legacy that continues.**

Learn more about this coffee

Garzon - Huila
Huila is Colombia's top coffee-producing department, responsible for roughly a fifth of the country's total output. Wedged between the Central and Eastern Andes along the upper Magdalena River valley, its dramatic range of altitudes and microclimates β€” from warm river towns to cool mountain slopes β€” lets neighboring municipalities produce coffees with genuinely different character from one another, even just a few kilometers apart.

Castillo
Castillo is one of Colombia's most important coffee varieties, developed by CenicafΓ© as an improved successor to Colombia's earlier disease-resistant varieties. It combines resistance to coffee leaf rust with high productivity and good adaptation to Colombia's diverse growing regions. While often associated with commercial production, carefully cultivated Castillo can produce a clean, sweet cup with balanced acidity and a clear expression of its growing environment.

Rotating Microlots
Colombia has a unique harvest schedule, thanks to the varied topography and proximity to the equator. Between those two variables, Colombia harvests nearly year round across the five main coffee growing regions. Each region has fairly reliable harvest times that conveniently stagger, providing fresh crop coffee all year round.

Washed
After picking, cherries are fed through a de-pulper to strip away the skin, then left to ferment briefly in tanks or troughs so the remaining fruit breaks down and rinses away cleanly. What's left is a seed wrapped only in its parchment shell β€” free of pectin and mucilage, ready to dry. It's a labor- and water-intensive method, but it rewards patience with a clean, articulate cup: bright citric or malic acidity and clear floral aromatics.

Raised-Bed DriedRaised beds lift the parchment off the ground on screened, elevated tables, letting air move around the coffee from nearly every angle. That airflow means slower, more even drying β€” and when beds are shaded to soften direct sun exposure, it also protects the bean's cell structure from UV damage, preserving clarity in the final cup.
